Anthony Holland
Having originated from Achill Island, Anthony Holland's roots are firmly grounded in creating interesting cuisine which over the years has developed a modern twist. He guides a team of nine through menus which reflect a dedication to fresh, locally sourced ingredients such as fish, game and the finest local vegetables. Fresh, exciting food at reasonable prices is his philosophy. The food at the Carlton Atlantic Coast Hotel is accompanied by a select wine list to compliment our dishes. This, combined with the friendly excellent service and hospitality provided by the hotel's service team adds up to a memorable dining experience.
