Having originated from Achill Island, Anthony Holland's roots are firmly grounded in creating interesting cuisine which over the years has developed a modern twist. He guides a team of nine through menus which reflect a dedication to fresh, locally sourced ingredients such as fish, game and the finest local vegetables.
